Easy Thai-style grilled oysters

You need:
2 dozen live Coffin Bay Pacific Oysters
120ml fish sauce
120ml lime juice
2-3 small chillies, to taste
4 spring onions
1 clove garlic
4 sprigs fresh coriander

Method:
Preheat grill to lowest setting
Shuck oysters (see how to video on our website)
Finely chop chillies, spring onions, garlic and coriander
Mix fish sauce and lime juice
Add chopped ingredients to sauce
Spoon approx half a tspn of sauce over each oyster and grill, only for 1-2 minutes or until you see the edges of the oyster just starting to curl
Serve, with just a little more of the sauce

Note: if you don't want to grill your oysters, this sauce is also delicious as a dipping sauce.
